Deer/Elk Tenderloin

Ingredients:

  • Deer or Elk Tenderloins
  • Aces Wild OG Wicked Pig
  • Beef Consommé (or liquid of choice)
  • Aces Wild 4 Queens or Aces Wild High Steaks Beef Rub

Instructions:

1. Marination

  • Rinse the meat and pat dry
  • Mix ¼ cup of Aces Wild OG Wicked Pig with one can of beef consommé
  • Marinate tenderloins in the mixture for 45-60 minutes in a ziplock bag

2. Apply Seasoning

  • Cover with Aces Wild 4 Queens or Aces Wild High Steaks Beef Rub (or combination of both)

3. Cooking

  • Grill or sear the tenderloins to the desired doneness (recommend 130 degrees F for a slightly rare finish)

4. Serve

  • Enjoy the incredibly tender deer/elk tenderloins to share with friends or keep them all for yourself!

Porky's Palace Chicken Wings

Ingredients:

  • Chicken Wings
  • Aces Wild 4 Queens
  • Aces Wild Porky's Palace

Instructions:

1. Apply Seasoning

  • Lay out the wings and apply a light layer of Aces Wild 4 Queens, followed by a generous layer of Aces Wild Porky's Palace

2. Cooking

  • Grill or smoke the wings until the internal temperature reaches 160 degrees F
  • Transfer wings to a foil pan, cover tightly with foil, and finish cooking to 195-200 degrees F to achieve a bite-through and tender skin

3. Serve

  • Enjoy the wings either naked or with your favorite sauce.

Top Sirloin Kabobs

Ingredients:

  • Top Sirloin, cut into 1-inch cubes
  • ¼ cup Aces Wild OG marinade
  • 1 can beef consommé (13 oz) or liquid of choice
  • Veggies of choice (bell peppers, red onions, button mushrooms, etc.)
  • Aces Wild High Steaks Beef Rub
  • Aces Wild 4 Queens (optional)

Instructions:

1. Marination

  • Cut Top Sirloin into 1-inch cubes
  • Mix ¼ cup of Aces Wild OG marinade with one can of beef consommé
  • Marinate the beef cubes for one hour in a ziplock bag

2. Apply Seasoning

  • Cover with Aces Wild 4 Queens or Aces Wild High Steaks Beef Rub (or combination of both)

3. Preparation and Skewering

  • Prep your veggies; recommended choices include bell peppers, red onions, button mushrooms, and any others you prefer
  • Skewer the marinated meat cubes, alternating with the prepared veggies.

4. Apply Seasoning

  • Apply Aces Wild High Steaks Beef Rub on both the meat and veggies
  • Optionally, use Aces Wild 4 Queens as a base or on its own

5. Grilling

  • Grill the kabobs to desired doneness

    Holiday Prime Rib

    Ingredients:

    • Prime Rib (15 - 20 lbs)
    • Aces Wild 4 Queens Seasoning
    • Aces Wild High Steaks Beef Rub
    • Homemade Horseradish Sauce

    Instructions:

    1. Prepare Prime Rib
    • Trim excess fat from the cap and tail end, leaving a little for flavor
    • Rinse the meat and pat it dry
    • Cut the prime rib in half
    • Season lightly with Aces Wild 4 Queens
    • Vacuum seal and sous vide for 12 hours at 120 degrees F
    2. Apply Seasonings
    • After sous vide, remove from the vacuum-sealed bag
    • Lightly apply Aces Wild 4 Queens
    • Cover the entire loin with Aces Wild High Steaks Beef Rub
    • Let it rest for about 15 minutes

    3. Cooking

    • Preheat the grill or oven to 500 degrees F
    • Place the loins on a rack and watch closely as the outside forms a crust
    • Once the loin has a nice golden brown crust, remove it from heat
    • Let it cool for a bit, cover for about 30 minutes

    3. Serve

    • Slice and server the prime rib
    • Accompany with homemade Horseradish sauce
